Easy Mexican Chicken Crock Pot Recipe

Clean Eating does not need to be hard or even time consuming!  This crock pot meal is so easy that I make it almost weekly.  My family loves it and my children, 7 and 4, get so excited for it that they actually do a happy dance!  Not kidding, a Mexican Chicken Crock Pot Dinner dance.  I should record it.

Ingredients:

  • 1 lb. Chicken Breast
  • {2} 15 oz. cans of Black Beans
  • 1 bag of Frozen Corn
  • 1 cup Favorite Salsa
  • 1/4 cup Shredded Cheese (I use Organic Valley Mexican Blend)
  • 2 Diced Tomatoes
  • Diced Lettuce
  • Optional Burrito Wraps
  • Optional Spinach

Directions:

  1. Place chicken breast in crock pot.
  2. Add 2 cans of black beans, 1 cup of salsa, 1 bag of corn.
  3. Cook 4-6 hours on medium or low (depending on how fast your crock pot cooks).
  4. Dice tomatoes and lettuce.
  5. Make into a salad with spinach and lettuce, topped with tomatoes and cheese OR create a burrito bar and let the family choose what they would like to add!

Tips:

I do recommend that you buy all organic/ non-GMO ingredients.

Publix (our local conventional grocery store) does carry frozen organic corn, canned black beans, salsa and cheese.  I buy my organic chicken from Costco and Non-GMO wraps from Native Sun (or local organic grocery store).

If you could make your own black beans, even more amazing.

This is a super simple meal that lasts for days as left overs!
